Nutty Mushroom Pasta

8 oz. Dried Pasta
2 tsp. Olive Oil
1 Onion, chopped
1 Clove Garlic, crushed
2 tsp. Dried Oregano
Black Pepper
6oz. Mushroom, sliced
1 heaped tsp. Tomato Puree
14oz. Tin of Chopped Tomatoes
6 Green Olives, sliced
3oz. Cashew Nuts, roasted


1. Prepare the pasta, simmer in boiling water for 8 minutes, stirring occasionally.
2. Drain when cooked, stir in a dash of oil, cover & set aside.
3. In a large saucepan heat the oil & saut‚ the onion, garlic & oregano until softened.
4. Add the mushrooms & cook for 5 minutes stirring occasionally.
5. Stir in the tomato puree & chopped tomatoes & cook for 5 minutes.
6. Add the olives, cashew nuts & peppers & cook for 2 minutes.
7. Gently mix in the pasta & heat through.
