Lentils with Chestnuts

4oz (100g) cooked chestnuts.
4oz(100g) continental lentils.
1 bay leaf.
Olive oil.
4oz(100g) mushrooms.
1 medium onion, sliced into rings.
1 clove garlic, crushed.
1 tsp oregano.
3 tblsp soy sauce.
4 tblsp red grape juice / red wine.
6ozs(175g) tomatoes, skinned & chopped.
2 tblsp tomato puree.
1 red pepper (optional).
2 tblsp fresh parsley, chopped.
Vinaigrette dressing.
2 fl. oz. olive oil & a few drops of sesame seed oil.
2 tblsp cider vinegar.
1 tblsp grape juice.
1 tsp Dijon mustard.
Squeeze of garlic puree.
