Spiced Summer Fruits

4 Fl. oz. Orange Juice.
2 Tblsp. Honey.
4 Green Cardamon Pods.
3 Star Anise.
2 Drops Vanilla Extract.
4 Black Peppercorns.
3 Bananas, thickly sliced.
4 Ripe Peaches, thinly sliced.
225g Blueberries.


Bring the orange juice to the boil with the honey, cardamon, star anise, vanilla extract and peppercorns. Cover and simmer gently for 10 minutes, remove from the heat and cool. Sieve to remove spices.
Place the bananas at the bottom of the dish, scatter the peach slices and blueberries over the bananas.
Pour the juice over them and serve. ( The longer you leave it the stronger the spice flavouring becomes).
