Rhubarb and Date Delight
8 Tblsps. water
2 oz creamed coconut
Peel and chop the rhubarb into ½ inch pieces and chop the dates.
Cook them with the water on a low heat for approx 15 minutes or until soft.
Grate the coconut and add to the cooked fruit.
Stir the mixture well and spoon into desert dishes.
Cool in the fridge and serve cold.
