12 oz. Rhubarb - sliced.
10 oz. Thick Yoghurt.
4 oz. Ground Almonds.
Maple Syrup or Honey to sweeten to taste.
Toasted Almond Flakes to garnish.
1lb. Silken Tofu.
2" Grated Fresh Ginger.
Cook the rhubarb in a minimum amount of water till tender.
Liquidize with the maple syrup or honey and tofu.
Fold in the fresh ginger, ground almonds and yoghurt.
If it is too thick add soya milk till the required consistency is reached.
Put into serving dishes and sprinkle with the toasted almonds.
