Fruit Cake

8 oz Stoned dates.
12 oz Mixed dried fruit.
6 oz Self raising flour.
2 tsp Ground mixed spice.
Sunflower & sesame seeds


Preheat the oven Gas 4 /180ºC /350ºF
Grease & line a 2 lb loaf tin.
Simmer dates in ¾ pint water until soft, then mash.
Put fruit in a mixing bowl.
Sieve in flour & mixed spices and stir in mashed dates.
Turn mixture into tin & spread level.
Sprinkle top with sunflower & sesame seeds and cover loosely with foil.
Bake for about 1 hour and leave in tin for 10 minutes before turning out on a wire rack to cool completely.
