Sweetie Beetie Salad

4 Medium Beetroots.
2 Tblsp. Sugar Free Marmalade.
2 Tblsp. Dessicated Coconut.
2 Tblsp. Currants.
2 Tblsp. Soya Milk
1/2 Lemon
1 Tsp. Miso.
1 Tsp. Cider Vinegar.


1. Soak the coconut in the soya milk and leave for 10 minutes.
2. Juice and grate the rind of the lemon.
3. Mix the miso with 2 Tsp. of warm water to form a smooth paste.
4. Peel and grate the beetroot.
5. Mix all the prepared ingredients together and chill for about 2 hours.
