Fruit & Nut Couscous with Crispy Green Salad
500g pack couscous
2 shallots, finely chopped
1 3/4 pints hot vegetable stock
4oz Ready to eat dried figs,
4oz Ready to eat dried apricots,
2 oz. pine kernels (toasted)
pinch ground allspice
zest & juice 1 orange
2 heaped Tblsps.freshly chopped flat leaf parsley
ground black pepper
1. Put the couscous and the shallots in a bowl and pour the boiling stock over.
2. Leave to stand for about 15 minutes until the stock has been absorbed.
3. Mix in the rest of the ingredients.
4. Serve with a crispy green salad.
