Carrot & Onion Salad

Ingredients
3 Carrots.
Black Pepper.
1/8 - 1/4 tsp. Cayenne Pepper.
3 oz. Onion, peeled.
4 oz. Lemon juice.
1/2 tsp. Fresh Ginger, grated



Instructions

1. Peel the carrot and cut into thick oval slices.
2. Halve the onion lengthwise and then cut it crosswise into thick slices.
3. Boil a pan of water, put in the carrots, bring back to the boil. Boil rapidly for 2 seconds only. Drain the carrots and rinse in cold water.
4. Combine all the ingredients and serve.
