Avacado & Carrot Salad
Ingredients
12oz. Carrot, grated.
2 oz. Raisins
4Tblsp. Lemon juice.
2 Avocado Pears, ripe
For Fresh Ginger Dresssing
Mayonnaise:
4Tblsp. Lemon Juice,
2 Tblsp. Olive Oil,
2 - 3Tblsp. Water and Pepper to taste
8 oz. Silken Tofu,
1Tblsp. Tamari,
Blended until smooth. (Makes 1 pint )
2 Tblsp. Mayonnaise.
1 Tsp. Fresh Root Ginger, grated.
4 Tblsp. Natural Yoghurt.
Toasted Sesame Seeds.
Mix mayonnaise and yoghurt with ginger.
Spoon on Avocado and Carrot Salad and sprinkle on the Sesame seeds.
