Basil and Garlic Roasted Red Roots

4 apple-size raw beetroot
4 garlic cloves
Handful fresh basil leaves
1 Tblsp. olive oil


1. Peel the beetroot and cut each one into 8 pieces, peel the garlic and halve lengthways.
2. Put all the ingredients on a sheet of foil or in a roasting bag.
3. Wrap making sure all the edges are sealed.
4. Bake in the oven 180C/350F/Gas 4 for 35 - 40 minutes.
