Roasted Mushrooms in Lemon & Garlic

Ingredients:
2 Garlic Cloves. 1 Lemon. ¼ Pint Olive Oil. 2 Tblsp. Parsley, chopped. Black Pepper. 8 Large Flat Field Mushrooms. | |

Method:
Pare the zest of the lemon finely. Peel and crush the garlic cloves. Put the lemon, garlic and oil in a jar and shake well. Place a tight lid on the jar and leave in the fridge for 3 days for it to infuse. Put the mushrooms, stalk side up in a roasting tin and drizzle with two thirds of the oil. Bake in the oven for 15mins. Mark 7/220C/425F. Turn the mushrooms over and baste with more oil. Bake for another 5-10 mins, basting occasionally until they are browned. Place on a serving plate, scatter over the chopped parsley, season with pepper and serve with lemon wedges. |
