Food at the Gentle Approach to Cancer in Preston

Each month Marilyn and her team of helpers organise and prepare a Vegan meal for all those attending - patients, supporters, therapists and helpers. Some patients, if they wish, also help to do this so that they learn in the process. When the meal is served she gives out the complete recipe and cooking instructions. Below are the recipes that have been served over the last few years; examples of the culinery delights awaiting you at the Gentle Approach. The recipes have been adapted from a variety of sources in the interests of cancer patients.

Mandarin and Apricot Delight
Category: Sweets
Ingredients:
4 oz. Hunza Apricots, soaked
1lb Firm Tofu
2 Tblsp Soya Milk
2 Tblsp Sunflower Oil
3 Mandarin Oranges
4 Tblsp. Soya Cream
1 Rounded Tblsp. Maple or Date Syrup
3 oz. Ground Almonds
Method:
Cook the apricots in enough of their liquid to cover them until tender, then stone.
Crumble the tofu and blend with the apricots, soya cream and milk, syrup and sunflower oil.
Mix in the ground almonds.
Peel and chop the oranges, saving a few slices for decoration.
Mix in the chopped oranges.
Remove the apricot kernels from the stones.
Place the mixture into a bowl and decorate with the orange slices and apricot kernels.
Chill before serving.
