Food at the Gentle Approach to Cancer in Preston

Each month Marilyn and her team of helpers organise and prepare a Vegan meal for all those attending - patients, supporters, therapists and helpers. Some patients, if they wish, also help to do this so that they learn in the process. When the meal is served she gives out the complete recipe and cooking instructions. Below are the recipes that have been served over the last few years; examples of the culinery delights awaiting you at the Gentle Approach. The recipes have been adapted from a variety of sources in the interests of cancer patients.

Banana Cake
Category: Sweets
Ingredients:
8 oz SR Flour
½ lb Raisins
¼ lb Desiccated coconut
1 oz Honey
Approx. ¼ pint apple juice.
½ oz Honey
½ Lemon.
1 lb Bananas
¼ lb Soya flour.
¼ lb Sunflower seeds.
Few drops of vanilla essence.
1 Banana
1 oz Tahini
Method:
Preheat the oven Gas 4 /180ºC /350ºF
Brush a 6” x 6” cake tin lightly with olive oil.
Blend bananas with a little of the apple juice.
Add to rest of ingredients.
Add enough apple juice to make a smooth mixture of ‘dropping’ consistency.
Put into the pre-oiled tin.
Cook in the centre of oven until firm for approximately 1 ¼ hours.
Make the topping by blending, the 1 banana, honey, tahini and the juice of ½lemon.
When the cake is cool spread the topping onto the cake.
