Ingredients:
8 oz. Red Kidney Beans 1 Onion, chopped 1 Green Chilli, finely chopped 2 Garlic Cloves, crushed 6 oz. mushrooms, sliced 1 Tin Chopped Tomatoes 2 Bay Leaves 8 oz mixed vegetables - e.g. carrots, corn, green beans 2 tblsp extra virgin Olive Oil for frying Approx., 1 pint Vegetable Stock or water from the Beans 1 Green Pepper, sliced 1 tblsp Paprika 1 tsp Chilli powder 1 tblsp Ground Cumin 2 tblsp Tomato puree 2 tsps Dried Oregano 1/4 tsp Black Pepper | |

Method:
Prepare the beans , i. e. soak over night, rinse, boil rapidly for 10 minutes, discard the water and rinse, simmer in fresh water for 1 & 1/2 hours, alternatively use pre - cooked tinned beans. Heat oil in a large pan, fry the onion, garlic and chilli for 3 minutes. Add the spices and fry for 1 minute. Add the vegetables, tomatoes, tomato puree, herbs, pepper and stock and simmer for about 10 - 15 minutes. Add the prepared beans and heat through. Serve with brown rice and fresh salad. If left overnight it tastes much better the next day ! |
