Food at the Gentle Approach to Cancer in Preston

Each month Marilyn and her team of helpers organise and prepare a Vegan meal for all those attending - patients, supporters, therapists and helpers. Some patients, if they wish, also help to do this so that they learn in the process. When the meal is served she gives out the complete recipe and cooking instructions. Below are the recipes that have been served over the last few years; examples of the culinery delights awaiting you at the Gentle Approach. The recipes have been adapted from a variety of sources in the interests of cancer patients.

Red Dragon Pie
Category: Main
Ingredients:
4 oz. Aduki Beans
1 Tbsp. Olive Oil
1/2 lb. Carrots, sliced
1 Tbsp. Soy Sauce
2 Tsp. Dried Sage
2 Tsp. Dried Thyme
Soya Milk
2 oz. Brown Rice
1 Large Onion, chopped
1/2 lb. tomatoes, chopped
4 Cloves Garlic
Pepper for seasoning Potatoes
Soya Margarine
Method:
Wash and soak aduki beans overnight . Drain rinse and cook till tender for about one hour.
Reserve stock.
Cook rice for 40 minutes.
Heat oil and sweat onions and garlic over a low heat.
Add carrots and cook for 5 minutes.
Add cooked beans, rice, tomatoes, herbs, soy sauce, pepper and stock from beans mixing well to give a moist mixture.
Transfer to a serving dish.
Boil the potatoes till soft, drain and mash adding required amounts of margarine and milk.
Spoon over bean mixture and bake for 30 - 40 minutes at 350F / 180C / Mark 4 until potato is crisp and golden brown.
