Ingredients:
4 oz. Aduki Beans 1 Tbsp. Olive Oil 1/2 lb. Carrots, sliced 1 Tbsp. Soy Sauce 2 Tsp. Dried Sage 2 Tsp. Dried Thyme Soya Milk 2 oz. Brown Rice 1 Large Onion, chopped 1/2 lb. tomatoes, chopped 4 Cloves Garlic Pepper for seasoning Potatoes Soya Margarine | |

Method:
Wash and soak aduki beans overnight . Drain rinse and cook till tender for about one hour. Reserve stock. Cook rice for 40 minutes. Heat oil and sweat onions and garlic over a low heat. Add carrots and cook for 5 minutes. Add cooked beans, rice, tomatoes, herbs, soy sauce, pepper and stock from beans mixing well to give a moist mixture. Transfer to a serving dish. Boil the potatoes till soft, drain and mash adding required amounts of margarine and milk. Spoon over bean mixture and bake for 30 - 40 minutes at 350F / 180C / Mark 4 until potato is crisp and golden brown. |
