Coconut & Avocado Whip

Ingredients:
3 oz Creamed Coconut 2 Large Avocados 2 Tblsp. Maple Syrup Chopped Mixed Nuts ¼ pt Boiling Water ¼ pt Soya Milk 2 Tsps. Fresh Mint 1 Small Orange, thinly sliced | |

Method:
Put the creamed coconut & the boiling water in a small bowl and stir till completely dissolved. Scoop out the flesh of the avocados, put it in a blender together with the creamed coconut, syrup & soya milk and blend to a smooth rich cream. Pour into individual serving dishes & sprinkle with nuts. Decorate each with fresh mint and orange slices. Chill for at least an hour before serving. |
