Ingredients:
2Tsp. Extra Virgin Olive Oil 8oz. Shallots, chopped. 1/2 Tsp. Ground Allspice. 1/2 Tsp. Ground Cinnamon. 1 Tblsp. Dried Thyme. 14 oz. Tin or 6 oz. dried Red Kidney Beans. 14 oz. Tin or 6 oz. dried Pinto Beans. Tamari and Pepper to taste. 4oz.Button Mushrooms. 4oz. Prunes. 14oz. Tin Tomatoes. 2 Oranges. 1Tblsp.Red Wine Vinegar. | |

Method:
1. Heat the oil and fry the shallots for 5 minutes. 2. Add the spices and thyme and cook for 3 minutes. 3. Add the zest and juice of the oranges. 4. Stir in all the remaining ingredients apart from tamari and pepper. 5. Cover and simmer gently for approx., 40 minutes, stirring occasionally. 6. Season to taste with tamari and black pepper. 7. Serve with brown rice and salad. |
