Ingredients:
500g pack couscous 2 shallots, finely chopped 1 3/4 pints hot vegetable stock 4oz Ready to eat dried figs, roughly chopped. 4oz Ready to eat dried apricots,roughly chopped 2 oz. pine kernels (toasted) pinch ground allspice zest & juice 1 orange 2 heaped Tblsps.freshly chopped flat leaf parsley ground black pepper | |

Method:
Put the couscous and the shallots in a bowl and pour the boiling stock over. Leave to stand for about 15 minutes until the stock has been absorbed. Mix in the rest of the ingredients. Serve with a crispy green salad. |
