Baked Savoury Rice with Cashews

Ingredients:
8 oz. Long Grain Brown Rice 1 Bay Leaf 2 Tblsp. Olive Oil 1 Large Onion, chopped Sesame Seeds 1 Garlic Clove 2 Celery Stalks, sliced 3 Tsp. Thyme 2 Cooking Apples 1 Tblsp. Shoyu Sauce 3oz. Cashew Nuts Black Pepper | |

Method:
Cook the rice with the bay leaf, as method on packet. Saute the onion, garlic, carrot and celery in the oil until soft. Cut the apples, unpeeled in chunks, stir with the herbs,cashews and shoyu into the rice. Put in an oven dish and sprinkle with sesame seeds. Bake in the oven, Mark 5, 190 °C, 375 °F, for 30 mins. Serve with a sharp fruit sauce e.g. Oriental Garden Sauce. |
