Avacado & Grapefruit Vinaigrette

Ingredients:
4, 1 Inch Slices Ciabatta Bread 2 Tblsp. Extra Virgin Olive Oil 2 Grapefruit 4 Avocados 5 Tblsp. Extra Virgin Olive Oil 2 Tblsp. White Wine Vinegar 1Tsp. Coarse-grain Mustard Freshly Ground Black Pepper | |

Method:
Cut the bread into 1" cubes, lay on a baking tray, drizzle with the oil and bake for 10 mins. turning once, Mark 6, 200ºC, 400ºF Peel the grapefruit, removing all the pith and membrane, cut into segments and place in a bowl. Peel and slice the avocados and add to the grapefruit. Make the vinaigrette putting all the ingredients into a screw top jar and shake well. Drizzle the vinaigrette over the fruit and toss well. Add the croutons and serve |
